Yellow tea is lightly fermented tea. Its processing technique is similar to that of green tea. The major difference between the two is that yellow tea has a process called Meng Huang (covering to make it turn yellow), which gives yellow tea the unique character of yellow leaf and yellow liquor. Huo Shan Huang Ya

History of Huo Shan Huang Ya can be dated back to Tang Dynasty. This famous Chinese yellow tea was tribute tea to Chinese emperor in Qing Dynasty. Modern Huo Shan Huang Ya was introduced in 70s after an effort to recover the lost traditional Huo Shan Huang Ya process technique.

As its name suggested, Huo Shan Huang Ya is a product of Huo Shan, AnHui. The best Huo Shan Huang Ya production areas in Huo Shan are: Jin Ji Shan of Da Hua Ping, Jin Zhu Ping of Shang He Jie, and Wu Mi Jian of Yao Jia Fan. Those areas are all high mountains with weather and and soil conditions specially suitable for tea growth. Huo Shan Huang Ya harvest time is around Gu Yu. It is made of one bud and one or two leaves. Different types of yellow tea have different Meng Huang technique. The Meng Huang technique of Huo Shan Huang Ya is the lightest, which makes it more close to green tea.
